Chitranna or Lemon rice is the most popular and tasty breakfast ( and now lunch box recipe too ) across karnataka and almost all over. It really tastes good and very easy to make even for bachelors or for whoever new to cook.
Ingredients needed :
Rice – 1 to 1.5 cups
Lemon – 2 or 3 small or 2 big size ( depends upon the juice in it )
Refined Oil – 5 to 6 tea spoons
Mustard – 1 tsp
Jeera – 1/2 tsp
kadale bele or Bengal gram – 1 tsp
Uddina bele or Urad dal – 1 tsp
Kadalekaayi beeja or ground nuts – 2 to 3 tspns
Green chillies – 5 to 6 chopped
red chilli – 1 to 2
Coriander leaves – 1/4 cup chopped
Curry leaves – 1 spring
Tengina thuri or coconut powder – 1/2 cup
Salt – 1.5 to 2 tspns
sugar – 1/2 tspn for taste.
 Cook rice in a pressure cooker and once it cools, remove rice to a mixing bowl and allow it to cool well, so that the rice separates.
 Keep a pan, add refined oil, mustard, jeera, groundnuts, kadale bele, uddina bele, green chillies, red chillies, fry well for few seconds,add curry leaves, coriander leaves, tengina thuri, salt, Sugar and fry well until oil oozes out from the sides of the pan.
 Now switch off the stove and add lemon juice squeezed out of lemon and fry again.
 Now add cooled rice and mix well on all the sides.. Serve.
- We can add 1 capsicum chopped into pieces while frying green chillies and other ingredients in step 2.. We can also add 1 cup boiled green peas or bataaNi similar to the ones done in marriages and functions across karnataka.
- We can also grind green chillies, Coriander leaves, tengina thuri or coconut powder, salt in mixer and add this ground mixture to the voggarane or seasoning ( in step 2 above ) and fry till oil oozes and mix rice to that apart from the above procedure.
