Onion Potato Palya is a very popular side dish prepared across Karnataka and which is served in hotels packed inside the most popular Masala Dose/dosa. It tastes awesome with Chapathi, poori too..
Potatoes –> 2
Onions –> 1 big sized or 3 small sized
Green chillies —> 3 to 5
Coriander leaves –> 1/4 cup
Curry leaves –> 1 spring or less than 1/4 cup
Ginger –> 1/2 ” piece finely chopped or ginger paste
Tomato –> 1 big or 2 small
Sugar –> 1 spoon
Salt –> 2 tspns or 1.5 tspns as needed
Mustard seeds –> 1 tspn
Jeera –> 1 tspn
Bengal gram or kadale bele –> 2 tspns
Urad dal or Uddina bele –>1 tspn
Turmeric powder —-> 1/4 tspn
Refined oil –> 3 to 4 spoons
 Boil potatoes with a pinch of salt in pressure cooker for 2 whistles.
 Once it cools, peel the skin, Mash ( but do not powder it fully like a paste!) it just to small rounds. Keep it aside to cool.
 Now make Voggarane or Seasoning:
Heat oil in a pan, add mustard, Jeera, Kadale bele , uddina bele, once it gets little golden color add turmeric powder, now add green chillies, curry leaves,ginger, fry well, add onion chopped pieces, fry well until it gets golden color ( for taste) and add tomato chopped pieces, add a 1/4 tsp salt ( for tomato to get cooked well ) and now add Mashed potato in 2nd step, little salt and sugar.
 Fry well for a couple of minutes and serve along with Poori, Chapathi or Dosa.
We Can add 1/4 cup of coconut or Kaayi thuri which is optional, which enhances taste of the palya.
